Healthier Version of Banana Bread…Banana OATMEAL Bread :D
What You’ll Need:
2 whole, ripe bananas 1 large egg, beaten 3/4 cup milk 1 cup whole wheat flour 1 ¼ cup old-fashioned rolled oats 1/2 cup + 1 tablespoon packed brown sugar 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 ½ teaspoon pumpkin pie spice 1 tablespoon butter, melted 1/2 cup dried cranberries
What to Do:
Preheat oven to 350 degrees.
For the Topping: In a small bowl, combine 1/4 cup  oats, 1/8 teaspoon pumpkin pie spice, ¼ teaspoon cinnamon, 1 tablespoon  brown sugar, and 1 tablespoon melted butter; set aside.
For the Bread: Mash bananas in a medium bowl, then  stir in egg and milk. Add the flour, baking soda, baking powder, salt, 1  cup oats, ½ cup brown sugar, 1 teaspoon pumpkin pie spice. Stir just to  combine (batter should be lumpy). Stir in cranberries.
Pour mixture into a lightly greased loaf pan or muffin tin, and sprinkle with topping mixture.
Bake at 350 degrees for 50 to 55 minutes. Loaf is done when a  toothpick inserted in comes out clean or with some dry crumbs from the  topping.
Eat up!

Strawberry Shortcake
(makes 1 cake—about 9 slices)
Ingredients (sorry about some of the measurements being in weight. :/ ) :
184g sugar
4 eggs
240g whole wheat flour
2 1/2 tsp olive oil
1 cup skim milk
2 tsp baking powder
1 tsp vanilla
20 T fat free whipped cream (for the topping)
27 strawberries (for the topping)
Directions:

In a mixing bowl, beat eggs. 
Gradually add the sugar, beating until thick. 
Combine flour, baking powder and salt; beat into the egg mixture. 
Add milk, oil and vanilla to the batter and mix it all up. Pour into 2 greased 9” round baking pans. 
Bake at 350 for 25-30 minutes or until cake looks done. 
Cool. 
Put whipped cream and sliced strawberries on top of one of the cakes, then place the other cake on top of that.
Then cover the top of the cake with whipped cream and strawberries.
Now cut into pieces (9 or so) and enjoy.(:

3/4 cup brown sugar, not packed

pinch allspice
1/4 tsp salt
2 tbsp vegetable oil
2 large egg whites
1 1/2 tsp vanilla extract
baking spray
1 1/2 oz chopped walnuts
 Directions: In a medium bowl combine apple, 1/8 tsp cinnamon, agave, and lemon juice. Set aside. Preheat oven to 350°. Spray a 9 x 5 inch loaf pan with baking spray.
In a medium bowl, combine flour, baking soda, nutmeg, cinnamon, allspice and salt with a wire whisk. Set aside. 
In a large bowl mix oil, egg whites, sugar, apple sauce and vanilla; beat at medium speed until thick. Scrape down sides of the bowl. 
Add the flour mixture, then blend at low speed until combined. Do not over mix. Foldin apples and walnuts.Pour batter into loaf pan and bake in the center rack about 55 minutes, or until a toothpick inserted in the center comes out clean.

Super simple recipe, super deliciously dense & moist muffins. Mmm…just made these last night and they were spectacular! Only 100 calories a serving!

Protein-Packed Ice Cream! :) - Recipe from Oxygen Magazine
Ice Cream
5 egg whites
1 scoop whey protein powder, flavor of your choice
1-2 packets Stevia
Peanut Butter Cups
1 scoop chocolate whey protein powder (I used a pre-packaged chocolate protein shake and didn’t add the water)
1 tbsp all-natural peanut butter
1 tbsp unsweetened cocoa powder
1-2 packets Stevia
4 oz water
Directions
For the ice cream, place egg whites in a mixing bowl.  Use a handheld electric mixer to beat them into stiff peaks.  Fold in the whey.  Add sweetener to taste.  Freeze for at least 1 hour (longer if you have time).
Meanwhile, make the peanut butter cups by blending all the ingredients together in a blender.
Divide the peanut butter mixture into round muffin tins (I used a rubber, heart shaped “tin”. Makes them easier to remove), filling them about 3/4 full.  Place filled muffin tin in freezer and let freeze for about an hour or until firm.
When ready to eat, scoop ice cream into a bowl and top with two peanut butter cups.

SPINACH BROWNIES (not actually related to the dessert, except by shape!)
AKA crustless quiche AKA If you only make one recipe from me EVER, make this one.
(10 ounce) frozen package spinach1/2 cup all-purpose flour1/2 teaspoon salt1/2 teaspoon baking powder1 egg1/2 cup milk1/4 cup butter, melted1/2 onion; chopped1/2 medium red pepper; chopped1 clove garlic2 pieces of bacon; chopped1/2 cup part skim shredded mozzarella cheese
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 8×8 inch baking dish.
Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach cooked, about 5 minutes. Remove from heat, drain thoroughly and set aside.
Sautee red peppers, onions, garlic and bacon in a pan over medium heat until vegetables are slightly softened.
In a large bowl, mix flour, salt and baking powder. Stir in egg, milk and butter. Mix in spinach, pepper mixture and mozzarella cheese.
Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.
I didn’t have enough spinach so I added some frozen peas! Delicious! Mine come out to about 125 calories per square, but yours may differ depending on how many squares you cut the bars into, how many calories are in your cheese, and how much bacon you use (I add a little extra). 
While these may not be a dessert, I often choose to eat them INSTEAD of my dessert. That’s how much I love these damn things.

reblogging this again because i just made these for lunch and DAMN they are sooo good! i made a few changes though, and doubled the recipe so it fit in a 8x12 pan. here’s my variation:
3 1/2 cups fresh spinach
1/2 cup all-purpose flour
1/2 cup wheat flour
1 teaspoon salt
1 teaspoon baking powder
2 large eggs
1 cup skim milk
1/4 cup canola oil
1 onion
1 medium red pepper
2 cloves garlic
slightly less than 1 cup part skim shredded mozzarella cheese
seriously though, these things are amazing. i cut mine into 8 pieces and each was 169 cal.

THINK THIN : Banana cookies (they taste just like banana bread!)
1 banana
1/3 oat bran
1/3 wheat bran
1/3 wheat germ 
2.5 tbsp flour 
4 tbsp skim powdered milk
1/2 C unsweetened applesauce (or plain yogurt)
1 C sweetener of choice 
1 tsp baking powder 
cinnamon and nutmeg to taste ! 
350 for 17 minutes - makes 20-24 cookies, 20-25 calories each! 
Hands up for a 25 calories cookie !
